And another one!  A Japanese chef with perfect technique, subtle flavours and an amazing menu, in charge of a Paris restaurant…like Le Clarisse, Kei, Guilo-Guilo and many others, here is Japan in all its splendour in Paris!  Chef Tetsuya Hibino has worked with Michel Bras in Laguiole and with Sylvain Sendra in Paris.  There he has picked up the essence of creativity and technique and is now delighting diners at Le Carré des Vosges.

The 17.50€ lunch menu (starter, main and dessert) is the perfect remedy for these recessionary times and for the ridiculous prices charged in some Paris restaurants.   It really is a bargain, bearing in mind the quality of the ingredients, the finesse of the cooking and its location.  Our meal on the 18th April comprised:

• A leek velouté with a potato ice cream – a perfect balance of flavours and textures, delightful

• Pan fried black mullet, with a barley taboulé and jus – very well designed, a good compromise between lightness and pleasure

• A Paris-Brest with a new look – a triumph both visually and gastronomically

Le Carré des Vosges is without doubt one of the best restaurants in this area, and what’s more, very affordable.
